● Assign your kiddo the task of mashing the ripe bananas for the muffin batter. Provide them with a small bowl and a fork, and let the fun commence!
● Allow your child to assist in adding ingredients to the muffin batter. They can help measure and pour in the flour, sugar, baking powder, salt, and other ingredients. You can guide them in measuring out the correct amounts and encourage them to be careful and precise.
● Involve your child in the mixing process by letting them stir the muffin batter. Show them how to combine the dry and wet ingredients using a spoon or a spatula.

- ½ cup coconut oil (or melted unsalted butter)
- ½ cup brown sugar
- 3 bananas, mashed
- 2 large eggs
- ¼ cup milk (I used whole milk, but I’m sure any milk would work here)
- 1 tsp vanilla
- 1½ cups all-purpose flour
- ½ cup wheat bran
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- ¼ tsp cinnamon
Streusel
- 1¼ cups all-purpose flour
- ½ cup brown sugar
- ⅓ cup sugar
- ¼ tsp salt
- 6 tbls unsalted butter, melted
- ½ cup chopped walnuts

INSTRUCTIONS
Preheat your oven to 375℉ and lightly grease or line your muffin pan (these liners are great).
In a medium bowl, mix together the coconut oil, brown sugar, bananas, eggs, milk, and vanilla until smooth.
In a large bowl, whisk together the flour, wheat bran, baking powder, baking soda, and salt.
Make a well in the center of the dry ingredients and pour in your liquid mixture from the second step. Mix until just combined. Do not overmix. Fill the muffin tins evenly (approximately ¾ full).
Spoon a couple tablespoons of the streusel on top of each muffin.
Bake the muffins for 20-25 minutes or until they are lightly golden brown and a toothpick or tester comes out clean. Let them rest in the pan for 5 minutes before removing to cool and enjoy.

Notes
- When I have really ripe bananas, I peel them and freeze them in freezer-safe bags. I then thaw them for recipes like this. If you choose to do the same, you may notice that as they thaw they excrete a fair amount of liquid. If you’re using them for this recipe, make sure to drain that liquid before you mash the bananas.

SERVE WITH: A smoothie / eggs and bacon / fresh fruit / a great cup of coffee
